Founder & Owner

Island Creek Oyster

"Today, the food scene in Boston always surprises me with its ingenuity and diversity. I think people are less afraid to take risks in flavor profiles and restaurant formats, and I love experiencing all of it."

William Bennett, better known as Skip, was born in Duxbury and raised among a family of commercial fishermen. He graduated from Merrimack College in 1988 with a bachelor's degree in Business Administration and started his first shellfish farm in 1990. The farm and business of Island Creek Oysters began in 1995, with Skip pioneering the oyster farming industry in Duxbury Bay. Today, Island Creek Oysters has grown to several farms, including one of the few hatcheries in New England, a wholesale operation with distribution to over 700 chefs nationwide, and a robust e-commerce platform. Skip also owns and operates three restaurants: The Raw Bar and Winsor House in Duxbury, Massachusetts, and The Shop in Portland, Maine. The most recent addition to the Island Creek name is a first-of-its-kind cannery in New Bedford.

Skip sits on the Board of the non-profit Island Creek Oysters Foundation and the Caribbean Harvest Foundation, a Haitian non-profit organization.
