Tracy Chang is the chef/owner of PAGU restaurant in Cambridge, MA. She trained with three-star Michelin Martin Berasategui in Spain. She has guest lectured with Harvard Science & Cooking, MIT, Brown/RISD, CIA Napa, and Barcelona Science and Cooking World Congress. She has made appearances on Chronicle, Food Network, WBUR, WGBH, and National Public Radio (NPR). She is a three-time James Beard Foundation (JBF) semifinalist and alum of the JBF Bootcamp for Policy & Change and Women’s Entrepreneurship Leadership Program. Chang co-founded two nonprofit initiatives, Off Their Plate (OTP) and Project Restore Us (PRU) to provide food and groceries to food-insecure families. Chang’s work with both organizations has garnered her international recognition (the Basque Culinary Center named her the top 10 nominees of the Basque Culinary World Prize) and an invitation to the 2022 White House Conference on Hunger, Nutrition, and Health. She is an appointed culinary diplomat with the U.S. State Department. Chang enjoys experimenting with fermentation projects with her husband, two kids, and pug Pearl, cooking for her 100-year-old mentor, the legendary WWII veteran, civil rights activist, entrepreneur, and Renaissance man, Marvin Gilmore, and designing culinary trips for her guests to Spain and Japan.
